Why don’t pilots take off with their planes overweight with fuel knowing it will burn off soon?

The Aircraft has special authorization, all aircraft are legally restricted to a maximum take-off weight as specified in the Weight and Balance portion of the aircraft’s Pilot Operating Handbook. MTOW is restricted at many airports no mater how sal or how big the airliner is. eg b738, b744 ,DC10F MD 11 A388 They all have safety restrictions in plce for this and they have ways of burning less fuel in flight by turning of a engine without the passenger knowing. It's being done for years
